Gourmet Diet Dinner Tonight

Tonight’s diet menu rocked! We had crawfish-stuffed portobello mushrooms, which ended up being about 250 calories, yummy delicious, and extremely filling. Here’s how it got put together. Last night, we ate boiled crawfish (which was also yummy). We then peeled the leftovers and put them in the fridge to be used tonight. (You could substitute shrimp or crabmeat if you wanted). So, we just mixed together the crawfish tails, some sauteed bellpeppers and onions, and some panko japanese bread crumbs. That mixture was scooped on top of giant portobello mushrooms with just a light sprinkle of lowfat mozzarella cheese on top. Baked those bad boys in the oven for a few minutes, and wow! Talk about good! Woot!
